All American Meatloaf:
* 1-1/2 lb. lean ground beef
* 1-1/2 c. soft breadcrumbs (plain or Italian style)
* 3 eggs, beaten
* 1/2 c. tomato ketchup
* 1/4 c. skim milk
* 1 Tbsp. dried minced onion
* 1 tsp. salt
* 1/4 tsp. pepper
* 1/3 c. tomato ketchup
Meatloaf Stack:
* 4 (1/2") slices of leftover meatloaf, heated
* 8 fried eggs (fried in non-stick skillet)
* 1-1/3 c. spaghetti or marinara sauce, heated
* 1 c. shredded mozzarella cheese
Meatloaf:
1. Combine ground beef, breadcrumbs, eggs, ketchup, milk, onion, salt and pepper in a large bowl and mix completely. Place meatloaf mixture in an
8"X4" loaf pan and shape to fit the pan. Bake meatloaf in a preheated 375ºF oven for 50 min. Remove from oven and drain any grease.
2. Drizzle remaining 1/3 c. of ketchup down top of meatloaf and return to oven for 10-15 min. Remove from oven and let stand for 10 min. before removing to serving platter.
Meatloaf Stack:
1. Warm meatloaf using your preferred method. According to USDA guidelines, reheated foods must reach an internal temperature of 165ºF or until hot and steamy.
2. Place 1 slice of meatloaf on each dinner plate. Top each piece with 2 fried eggs* and 1/3 c. sauce. Sprinkle each serving with 1/4 c. mozzarella cheese. Place in the microwave for 30-60 sec. to melt cheese.
* Fried Egg: Heat 2 tsp. butter in nonstick skillet over medium-high heat until hot. Break eggs and slip, one at a time, into pan. Immediately reduce heat to low. Cover and cook slowly until whites are completely set and yolks begin to thicken but are not hard, about 5 to 6 min. Continue as above.
